As soon as fall comes, we love to eat a tasty and satisfying soup. However, while taking care of one or more kids, it can be challenging to take your time for an extraordinary dish.
So, I've figured out a quick and easy recipe that the whole family will enjoy. You can easily vary it from day to day.
All you need is your favorite seasonal vegetable and a few more ingredients:
- 1 kg vegetables, for example squash, cauliflower, broccoli
- enough water so that the vegetables are slightly covered
- seasoning salt
- cream or coconut milk - if you like to
And the most important tool: a hand blender
- Cut your veggies
- let them cook until they are soft enough
- if there is still too much water left, then pour a little bit out
- put your pot away from the stove
- add your salt and cream if you like to
- blend until the soup has a creamy consistency
- as a topping you can use a delicious oil, cream or some squash seeds
This soup also is super suitable if you have a busy toddler that likes to help.
We use a wavy cutter for this purpose. This activity is Montessori inspired and will make your toddler feel extra proud. I have made the experience that my little one enjoys dinner more if he was able to help preparing it.
